Dining

SOIL. SUSTENANCE. SOUL.

We celebrate the traditions, culture, and identity that bind us to the Kingdom of Bhutan—to our ancestors, to one another, and to the land that sustains us. In our kitchen, we honour our roots while embracing thoughtful changes, carrying our culinary heritage forward while guarding its essence. This is our heritage cuisine: tradition in its living form. We thank you with open hands and a full heart for joining us at our table—to share this meal, our land, and our stories with you. — The Zhiwaling Family

soethab

Bhutan’s First Heritage Fine Dining Experience Soethab—the honorific Dzongkha word for kitchen—is dedicated to the expression of traditional Bhutanese cuisine. Centered around a single communal table and an open kitchen, every tasting menu highlights native heirloom grains, foraged wild greens, and seasonal harvests from the Paro Valley, prepared using time-honored hearth-cooking and fermenting techniques.
THE SOETHAB STORY

Gawa restaurant

In Dzongkha, Gawa signifies joy. Painted in deep forest-green tones that catch the evening light as day ends across the valley, Gawa is open primarily for dinner and connects directly to our outdoor pizza patio. Here, we gather for dinner, serving traditional Bhutanese recipes alongside international dishes centered around seasonal local produce, regional spices, and shared mountain plates.

lingka restaurant

Drawing its name from the Bhutanese tradition of outdoor garden gatherings, Lingka connects indoor dining directly to our traditional wooden cantilever bridge. Here, we offer a relaxed, all-day menu featuring wholesome local dishes and international favorites.

mad monk bar

The Mad Monk Bar pays tribute to Drukpa Kunley, one of Bhutan’s most iconic and unconventional 15th-century figures. Centered around an open fireplace, the bar offers a quiet space for evening drinks, serving locally brewed beers, house-infused botanicals, and classic spirits.

outdoor dining

Outdoor dining at Zhiwaling centers on two distinct settings: the open-air patio outside Gawa Restaurant and our traditional wooden cantilever bridge, which spans the trout pond. Surrounded by native pines and the sound of running water, these open-air tables connect daily breakfasts, casual lunches, and evening meals directly to the Paro landscape.

pizza patio

Built around an outdoor stone oven, our patio serves wood-fired pizzas made to order. Positioned beside Gawa Restaurant, the patio also provides an open-air setting for evening meals and traditional Bhutanese music performances hosted beneath the pines.
